This is a Mexican food made with country cheese inside a folded corn or wheat tortilla and cooked until the cheese melts. The main attraction of quesadilla recipe is the various comination of cheese. It may be spicy, plain or vegetable mixed cheese stuffing inside the tortillas. It could be easily made at home.

One can make the tortillas at home or can buy it from the market. It’s always served as snacks.

Ingredients for Tortillas

  • 1 Cup Self raising flour
  • 1 Table spoon melted butter
  • 1/2 tablespoon of salt
  • 150 ml luke warm water

Ingredients for stuffing

  • 450 g Cheddar Cheese
  • 1 cup chopped cilantro
  • 1 cups chopped Green Chilies
  • 1 cups chopped tomatoes
  • Pinch of salt
  • 1 table spoon of olive oil
  • Sour Cream
  • Guacamole

Cooking time: 15 minutes


First we need to make dough for making tortillas. Leave it for an hour. Now make equal sized balls, smear them with dry flour and roll them out on a rolling board .Heat a griddle. Put the tortillas on it. Moderately roast one side first then Flap it and turn it up so that the other side is must get cooked. Press to where it bubbles to force the air to the other side which will now swell up. Tortillas are now ready. One can use for the ready made tortillas to save time.

Now to make the stuffing for the tortillas we heat oil in a pan at medium flame. Add the chopped green chilies. Fry it for couple of minutes. Add the chopped tomatoes and salt. Don’t over fry it. Just do it for 1 minute. Add the cilantro leaves, which is actually is made of mashing ripe avocados with a mortar and pestle and adding lime juice and salt and some times with seasonings.

Take tortilla on a flat surface, and cover half of it with cheddar cheese. Spread the fried stuffing which we have prepared. Fold the tortilla in half. Repeat this step for all of the tortilla. Grease plat withy oil and put the stuffed tortillas and keep in the microwave for 1-2 minutes till the cheese is completely melted. Remove the tortilla from microwave and put in the serving dish. Cut the tortilla in half and then in half again, with a knife or pizza cutter.

Serve with sour cream or with our favorite topping.
