However, this is a tasty chowmein chicken recipe that can be tried at home with success.

  • I chicken breast fillet
  • 2 bundles of fine noodles
  • 2 scallions
  • 1 tiny cabbage washed and neatly shredded or you can also use brussel sprouts cut into halves
  • 100g mushrooms
  • A one inch piece of root ginger
  • 2 cloves of garlic
  • 1 fresh red chilli
  • A handful of fresh cilantro
  • Salt and freshly ground black pepper
  • oil for cooking
  • 1 tsp cornstarch
  • 3 tablespoons soy sauce

Boil some water in a pan and when boiling drop the noodles and allow to simmer for 3 to 4 minutes before draining the water and removing the noodles into a strainer and running it under cold water so that they do not become sticky.

Now you need to cut up all the vegetables for the stir fry. Trim the ends of the scallions and slice very finely. Now peel the ginger and the garlic and cut into thin julienne strips. Also chop up the chilli finely, cutting it lengthwise. Cut the mushrooms and the cabbage into long thin strips. Similarly, cut the chicken fillet lengthwise into very thin strips.

Preheat a wok till it is piping hot and add a good amount of oil in a circular motion so as to coat the wok nicely. Put in the chicken strips and fry at high heat for a few minutes or until the chicken changes colour. Add all the vegetables except adding only half the scallion and the cabbage. Again stir fry for a few seconds while adding the salt and pepper at the same time.

Also add a little water and the cornstarch at this moment and stir. Remove the wok from the fire and add the soy sauce while stirring. Now add the noodles and toss it in well so that it mixes properly with the soy sauce and the vegetables. Your chowmein recipe is ready. Serve the chowmein immediately using chopsticks the traditional way or you could just use a pair of tongs for a much easier way out.
