Pineapple cakes, pineapple pastries are always loved by most of all.  So, today in series of cakes recipes, we will learn how to make up side down pineapple with rum soaked cherries cake right at home.

This is one of the tastiest pineapple cake recipes which everyone would like.

Ingredients

  • 3/4 pineapple peeled, cut into 1/4 inches tick pieces.
  • 6 medium sized eggs
  • 2 cups all purpose floor
  • 12 oz cherries
  • 1 cup sugar
  • 1 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 1/2 sticks butter
  • 3 teaspoon vanilla extract
  • 1 1/2 tablespoon brown sugar
  • 1 cup spiced rum

Directions

To start with this easy cake recipe, first mix cherries and spiced rum in a medium bowl and let it soak overnight (at least 8 hours). next day when start preparing cake, first, preheat oven at 350 deg F. Combine floor, baking powder and salt together and keep aside. now take another bowl and add 2 cups butter and 1 cup white sugar, mix them well together until turns out yellow creamy texture then add eggs one at a time and beat it and after adding all the eggs add vanilla extract and mix again. now mix this egg batter into floor mixture and mix it well until a smooth lump free batter forms. cake batter is ready now.

In second step, take remaining butter into an iron or nonstick skillet and melt it over low heat now put brown sugar , pineapple pieces, saute them for approx 4- 4.5 minutes and then add cherries soaked in spiced rum, remove the skillet from heat and light the rum first when it get lightened properly again put the skillet on the medium-low heat and cook it until all the rum evaporates out. remove the skillet and turn off the heat. now let this mixture cool for approx 7-8 minutes.

After it gets cooled, take half of the fruits(cherries pineapples) and spread them in baking pan (greased) uniformly and now pour in the batter over fruits. put the pan into the oven for 35-45 minutes. to check the cake is done good or not, insert tooth pick at the centre of cake after approx 30-35 minutes and if toothpick comes out clean and cake does not sticks to it that means cake is cooked well, turn off the oven and take out the pan else let it get cooked for another 10-12 minutes. Let the cake get cooled for 5-7 minutes.

Unfold the cake into a large plate by flipping it carefully. up side down pineapple cake is ready now. cut the cake into serving size pieces and serve along with remaining fruits.
